The first restaurant that Dufresne opened was in a New York slum, and its diners were true gourmets of the city, who came by limousine to his restaurant to taste his dishes.

And it is that this American chef is one of many American chefs who struggles to be recognized for his work, and to separate the American fame of Fast Food that has so damaged haute cuisine. Dufresne bases his recipes on the combination of flavors that can be distinguished, and although some dishes sound strange, he tries to achieve a balance with very different ingredients.
