Roasted carrots with cumin: ideal light recipe as a garnish

Today I propose this very simple but delicious recipe for roasted carrots with cumin. To give them a better flavor, I am going to prepare them with red onion. I find this onion very interesting since once it is roasted it is very sweet and combines perfectly with the carrot.

We are going to clean the carrots well and cut them in four lengthwise. Thus, we are going to obtain thin slices of carrots that are the ones we are going to use for the recipe. Now we cut the onion into julienne strips that we arrange in a baking dish and cover them with the carrots.
Now we mix the oil in a bowl together with the balsamic, the cumin, the salt and the pepper. We sprinkle all this on the carrots and onion and mix very well so that everything is well impregnated with the oil.
Chop the parsley and sprinkle it over all the other ingredients. We place the refractory in the hot oven, at 180ºC, for approximately 30 to 35 minutes. Halfway through cooking, I recommend stirring everything again to distribute the oil well over the carrots.
