We are in summer, it is very hot and we want fresh and light things, such as juice. This great way of providing energy to our body, nourishing it and detoxifying it at the same time, based on the intake of squeezed fruits and vegetables, is called juice therapy. Do you know the properties of fruit and vegetable juices?

Since ancient times the properties of food have been used to heal, but it is especially fruits and vegetables that provide us with the necessary substances for our body: vitamins, minerals, trace elements and bioflavonoids. We tend to know these advantages but lack of time prevents us from ingesting the recommended amounts of nutrients, so juices are an excellent option.

Types of juices

  • Freshly squeezed juices: they are consumed on the spot without any heat treatment for their conservation.

  • Pure juices: they are packed without prior concentration treatment, from fresh fruit with heat treatment for their conservation.

  • 100% juices or concentrated juices: they are made from concentrate, puree or a mixture of both with 100% fruit, reconstituted with water and aroma. First the water is extracted into the juice or juice through thermal processes.

  • Nectar: ​​it is the product resulting from the addition of sugar and water to natural, concentrated or cream juice. Nectar is a juice to which water and sugar or sweetener have been added.

  • Flavored soft drinks: you do not have to carry juice, nor do you use the term juice or the image of the fruit as a claim. They can contain a wide range of aromas and colorants declaring them on the label.

  • Enriched juices: they are 100% enriched juices with vitamins, minerals or other ingredients that improve their nutritional contribution.

How to prepare a juice

The quality of the juice depends on the choice of fruits and vegetables. The best thing is that they are fresh, of good quality, ripe and, if possible, they are free of chemicals or are ecological. You have to wash them well, with cold water and then dry them with a clean cloth. It is not advisable to leave them to soak for a long time so that they do not lose their properties.

Fruits and vegetables with hard skin must be peeled, and those with thin skin can be used without peeling, although very well washed and always removing the damaged parts. Those that contain small seeds, such as melon, watermelon or grapes, can be blended with the fruit except apples and papaya, whose seeds can contain toxic products. If they have larger seeds or bones, these must be removed beforehand.

In general, almost all fruits can be blended and we will use the juicer only in those that contain a large amount of water and peel so that they can be squeezed: orange, grapefruit, tangerine or lemon, for example. If we want to blend different fruits, it is best to leave the ones with the greatest amount of water for last, to drag out the remains of the ones we blended in the first place.

As for the utensils necessary to prepare juices, they are the following:
- Blender

- Scale / Measuring cups
- Strainer
- Knives and fruit pitter

How to drink juices

The juices should be drunk slowly so that the ptyalin (enzyme of the salivary glands) starts the digestion process properly. In addition, they must be ingested right after they have been made, since every second that the fruit is in contact with oxygen and light, it undergoes oxidation and loses its properties.

Juices should be part of a balanced diet in which fruits and vegetables have to be consumed in their proper measure. Although these provide few calories, which fattening juice will depend on the type of fruit, the mixture we use and whether or not we add sugar or some other element to sweeten.
